A small unglazed clay pan with a long clay handle, for tadka (tempering), dal, sambar, rasam, small curries and serving. The bowl is about 16 cm across and 7 cm deep, the length with the handle is 26.5 cm, it holds about 800 ml and weighs about 653 g. Heat oil, mustard, cumin and curry leaves in it and pour the tempering over dal or sambar, or cook and serve a small curry straight to the table. Use on a gas stove or firewood stove on low to medium flame. Before first use, soak the pan in water for a few hours, dry it, then season with rice water. Avoid sudden temperature changes, wash by hand with warm water and no soap, and dry fully before storing.
